Beets and goat cheese are amazing together. I had it for the first time years ago in a restaurant and have never looked back. Lately, I have been in a salad-funk. I believe certain places are better for salads, and Copenhagen is not that place, unfortunately. I used to love salads, and boasted about making the tastiest creations from the top of my head. But, ever since living in Copenhagen, I cannot make a salad that satisfies me. After many failed attempts over the last couple of weeks, this one was a success!
2 cups greens
1-2 red or golden beets, boiled (I roasted mine, but I would suggest boiling until tender)
3o grams Organic goat cheese
vegetables of choice: red pepper, red onion, orange slices, roasted fennel, etc.
Wisk all ingredients together and set aside for 5-10 minutes.
3 tbs olive oil
2 tbs white wine vinegar
1 tsp honey
1 small garlic clove, minced
salt & pepper to taste
Toss everything together and be sure to serve in the prettiest bowl you have.
